Does cooling alter rice properties
Cooling cooked rice causes some of its starch to transform into a more resistant form that is less digestible. This process slows down the absorption of sugar and helps prevent spikes in blood sugar levels after meals. Such a shift can be beneficial for individuals with insulin resistance or diabetes, as it aids in better blood sugar control. Additionally, cooled rice is believed to absorb fewer calories, which can contribute to more effective weight management.
