Celebrity chef warns against eating raw oysters

Celebrity chef Andrew Zimmern emphasizes that the flavor and texture of oysters are primarily determined by their location, with water conditions and seafloor composition influencing their unique taste profiles. He notes that oysters harvested just a few hundred yards apart can have markedly different flavors, and prefers oysters with a combination of coppery, salty, and slightly sweet notes. Zimmern favors West Coast oysters but acknowledges that East Coast producers are replicating similar flavors through careful site selection. He enjoys oysters prepared in various ways, including raw, grilled, and fried.
