Ghent's Plant-Based Transformation

Ghent has successfully transitioned to a plant-based food culture through grassroots activism and policy, establishing “Veggie Thursday” in 2009. The city has increased plant-based meal options across schools, restaurants, and institutions, reducing the carbon footprint of school meals by 38% since 2018. Innovative ventures in alternative proteins and dairy-free cheese development further support Ghent's environmental and health goals.
